In My Kitchen: My Go-To Soup Recipe
Since the fall has arrived and the weather has finally started getting colder I have been loving to cook soup to keep me warm and cozy. I love cooking, and now that I live alone I have been getting better at it. Soup is something I find very therapeutic to cook and there’s many different ways to do it. My favorite soup to cook is chicken soup, which I learned how to cook at home since my parents eat this a lot. I like this soup because it is a light and delicious meal.
For this recipe you will need:
Two pieces of chicken breast
1 cup of white rice
1 potato
2 large carrots
1 onion
3 cloves of garlic
White wine
1.5 litres of water
Basil
Salt
Pepper
Olive oil
Bread of your choice
Chicken broth
To make this soup I start by heating up my pan and adding in a bit of olive oil, my chopped carrots, onion, and garlic. I then add in my two pieces of chicken breast and 1.5 liter of water.
I leave the heat on high until the water starts to boil. Once the water is boiling I lower the heat to medium.
Next, I add some white wine to the water to give the soup a bit more taste (around 4 tablespoons). I also add in a cube of chicken broth, a teaspoon of salt and a bit of pepper.
I then let the soup cook for 40 minutes.
Once the 40 minutes have passed I remove the chicken from the water and leave it on a plate on the side.
I then add in my cup of rice and the cut potato pieces to the water. This then cooks for another 20 minutes.
In the mean time I “break apart” or shred the chicken and also toast a couple of pieces of bread. I like cutting the bread into triangles but this does not really matter, it is just my personal preference. I add a bit of butter and salt to the bread.
When the 20 minutes have passed I removed the soup from the heat and add in the chicken again. The soup is then ready to eat! I like dipping my pieces of bread in the soup. It is delicious.
